Kefir is a fermented milk drink that originated in the Caucasus Mountains of Eastern Europe. It is made by adding / feeding milk (I use goat's or grass-fed / pastured cow's milk) to kefir grains (a combination of beneficial bacteria & yeast) and allowing the grains to ferment the milk. The result is a tangy & slightly effervescent drink that is a great source of probiotics, protein & other essential nutrients beneficial for digestion & gut health. Kefir has a thinner consistency than plain yogurt, with a tangier, slightly more sour, acidic taste. If you are not a fan of the tangy taste of kefir, there are several options to make it more palatable: It can be blended with fruit & spices in smoothies or blended with veggies & spices for salad dressings & dips. Or it can be used in your baking recipes: added to pancake or waffle batter for a light fluffy texture or added to cake or muffin batter for a moist result.
